Mediterranean Style Hummus

Makes 4-5 cups. Suggest halving.

1/4 Cup fresh lemon juice

1/4 Cup Tahini

3-4 Cloves Garlic

1 can chickpeas

Combine lemon and tahini in blender. Emulsify.

Mince garlic, add to blender, and blend.

Slowly add chickpeas, blending well as you go.

If too thick, add water from chickpeas can

Blend in olive oil and/or lemon juice to taste.

Top with chopped parsley, paprika, and pine nuts.
